I couldn’t help myself! I know this has absolutely nothing to do with books, but I have previously confessed that I’m a closet foodie.
There are perhaps 2 or 3 (ok, probably more) things that I make that I truly feel are the absolute yummiest. I don’t think I’m such a wonderful cook or baker, but my skill is in my ability to look at a recipe and pick a winner. I know everybody’s taste buds are different but when I have my daughter’s 11 year-old friends over for dinner and they tell me that they don’t like guacamole but go on to devour mine, I know I’ve got a good thing going on. I frequently make this guacamole and it does not last very long in our household. Everyone who tries it begs for the recipe so here it is.
The Most Awesome Guacamole
The Kitchen Tools
Here are some of my tools of the trade that make this a 10 minute recipe. On the far left, I have a manual food processor that I purchased from Pampered Chef (it’s awesome!). In the middle is a juicer and on the far right is a Zyliss food chopper (it’s pretty awesome too!). And, let’s not forget the sharp knife!
3 avocadoes (peeled, pitted and mashed)
1 lime (juiced)
1 tsp sea salt
1/2 red onion (diced)
3 T fresh cilantro (chopped)
2 roma tomatoes (seeded and chopped)
1 tsp minced garlic
pinch ground cayenne pepper
1. Using the food processor (or masher), blend together the avocados, lime juice and salt.
2. Mix in the onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper.
3. Refrigerate 1 hour for best flavor or serve immediately. (Trust me … let it sit for a while first).
Seriously, this guacamole ROCKS! Enjoy!!
